Orange Chicken with Toasted Almonds and Sesame Seeds: “Meal of the Month”
Completely thaw in refrigerator. Pour flour mix onto a large plate. Coat chicken pieces in flour and set aside. Heat 1-2 Tbs oil in a large skillet over med heat. Brown chicken on both sides for about 2-3 min per side. Meanwhile, add any unused flour from the plate into the orange sauce bag and shake to combine. When chicken is browned, snip a corner of the sauce bag and squeeze contents of bag into skillet with chicken. Stir to scrape up brown bits from bottom of skillet. Cover, reduce heat and simmer 4-5 min or until chicken is cooked through. Sprinkle with seeds/nuts (toast in oven first, if desired). |
2 Bourbon and Brown Sugar Pork Tenderloins
| Completely thaw in refrigerator. Grill over med-high heat for approximately 6 min per side or until internal temp reaches 160F. Let stand 5 min. While meat is resting, bring marinade to a boil, and cook 1 min, stirring constantly, until slightly reduced. Cut meat diagonally across the grain into slices. Serve with cooked marinade as sauce. |
3 Balsamic Chicken
| Completely thaw in refrigerator. Preheat oven to 400F. Remove chicken from bag and arrange in a baking pan. Roast for approximately 1 hr or until juices run clear and temp reaches 165F. Transfer chicken to a serving platter. Skim fat and any impurities from drippings. Place baking pan on a burner over med-low heat. Whisk the chicken broth into the pan drippings, scraping up and mixing in any brown bits on the bottom of the pan. Heat through and drizzle over the chicken. |
4 Polenta, Black Bean and Veggie Bake
Completely thaw meat in refrigerator. Preheat oven to 350F. Bake, uncovered, for approximately 60 min or until heated through. |
5 Chicken or Tempeh Enchurritos
Completely thaw in refrigerator. Bake, uncovered, at 350F for about 30-40 min or until heated through and cheese on top is melted. To cook from frozen, bake, covered at 350F for 45 min. Remove cover and continue to bake for about 10-15 min longer or until heated through and hot in center. |
6 Parmesan-Herb Baked Tilapia
| Completely thaw in refrigerator. Preheat oven to 400F. coat fish with cooking spray. Bake, uncovered, for 15-20 min or until fish flakes easily w/ fork. |
7 Chicken Pot Pie or Tempeh Pot Pie w/ Herbed Biscuit Topping
| Completely thaw in refrigerator. Preheat oven to 400F. In large skillet, heat contents of chicken and vegetable bag until boiling. Reduce heat and simmer for 10 min or until thickened and reduced, stirring occasionally. Pour into pie shell. Open bisocuit topping. Tear small pieces of topping and place on top of pie, covering completely. Bake, uncovered, for about 40 min. Mixture will be bubbling and browned on top. If pie is getting too dark, lay foil (loosely) over top for last 10 min of cooking time. Let pie rest for 5 min before serving. |
8 Fabulous Char-Grilled Sirloin Kebabs with Golden Baked Onion Rings
| Completely thaw meat in refrigerator. Do not thaw onion rings-bake from frozen. Soak skewers for at least 30 min to prevent burning. Preh-heat grill to med-high. Thread beef cubes, loosely, on skewers. Grill on oiled rack, turning occasionally, for aobut 8-10 min. Or, broil kebabs under a pre-heated broiler, about 4 inches from heat, turning occasionally for about 8-10 min. Meanwhile, bake onion rings or fries according to package directions. Serve with fresh organic greens with a sesame-ginger salad dressing. |
9 Michelle's Thai Coconut Chicken Stir Fry with Brown Rice
| Completely thaw in refrigerator. To cook brown rice, put rice and 2 cups of water into medium pot. You can add 1 Tbs of butter and salt to taste, if desired. Bring to a boil, reduce heat, cover and simmer for 50 min on low. Do not remove lid. Allow to sit, covered, for 10 min longer. Fluff with fork. Meanwhile, to cook chicken, heat 1-2 Tbs of oil in a large skillet over med heat. Brown chicken on both sides for about 2-3 min per side. When chicken is browned, snip a corner of the sauce bag and squeeze contents of bag into skillet with chicken. Cover, reduce heat and simmer 4-5 min longer, or until chicken is cooked through. Serve chicken and sauce over hot rice. |
10 Crab Lover's Quiche
| Completely thaw in refrigerator. Bake, uncovered at 350F for approximately 1 hr, or until eggs are set and top is golden. |
11 Texas-Style Big and Bold BBQ Meatloaf
| Completely thaw in refrigerator.
Completely thaw meatloaf in refrigerator. Keep fries frozen. Preheat oven to 350F. Place meatloaf, uncovered, into oven and bake for about 60-75 min or until internal temp eaches 150F. Let rest for 5 min. Split orders, bake for about 45 min or until internal temp reaches 150F. Let rest for 5 min. Meanwhile, bake steak fries from frozen, according to package instructions.  |
